I am often asked about examples of what I eat, so here is a bit of another visual. I had a great breakfast this morning, so didnt need to eat lunch. I had a long drive and came home hungry, so I am having a snack before dinner. When I cut a slice of Camembert, this is what I mean...it is generally a quarter of the cheese. I had my slice, still hungry, so may go back for another :) So many people avoid soft cheeses because they are so in fat, but that is exactly why I love to eat more of them. It is such a shame watching people reduce their fats when we know how essential they are for good health...for so many different reasons. Just one of those reasons is vitamin K2. It is essential for pregnant mothers and growing children, especially for their bone development. Have you ever wondered why so many people these days have crooked teeth? Is it genetic? I am afraid not; it is a lack of vitamin K2, which causes us to develop narrow jaws. Why do we have such a deficiency in K2? Virtually the only sources are fatty foods—grass fed butter, pastured egg yolks...and soft cheeses. #bringbackthefat
