I am thinking of you Rusty Trombone with this easy breakfast that I indulge in on occasion. My palate is more savory than sweet but this is a great change of pace. It is gluten free, soy, free, and you can make it ahead of time for those rushed mornings. Gather these: 2 cups water 2 cups coconut milk (beverage style, not canned) 1 cup of organic steel cut oats 2 large and ripe bananas handfull of walnuts or slivered almonds 2 tsp cinnamon pinch of sea salt 1 tsp ground flax 1 tsp chia seeds 3 tsp of pure vanilla extract fresh or frozen berry blend In a pot, bring the water and coconut milk to a soft boil. Add in the steel cut oats and lower the heat to a low simmer. slice of the bananas and add them in. Use a whisk to mash them up even more. When the oats are soft, remove from heat and add in the cinnamon, nuts, and vanilla extract. Top with, or stir in the berries. Splash a little more coconut milk on top and put it in your mouth.
