I am tired and beat. Braised the pork shoulder and put to cook overnight. Got up and put the red Chile to boil and in the meantime pulled the pork shoulder apart and chopped it all up by hand. After that I blended the Chile and took out the masa to start mixing it with the lard, salt, warm water and Chile. I ended up making pork, pork with jalapeño, pork with queso fresco and jalapeño with queso fresco tamales. I dont mess around when it comes to tamales. They are huge and very flavorful. You get full eating 2 or 3 of them just to give you an idea of how big they are. LOL Since I did it all by myself, I am damned tired but it was a good day. Time to take a muscle relaxer and get some well earned sleep. Merry Christmas everyone.
