I am trying to figure a way to replicate Peorias long gone but much loved Pepe Taco. Many have joined the effort via the Retro Peoria Facebook Page. Here is a brief summary of where we are at the moment: The late Rob Schunk (who WAS Pepe Taco) had the taco seasoning recipe in his head and apparently nowhere else. He created the blend and put it in bags for Pepe Taco employees to add to the taco meat. I have located the supplier of the custom meat blend. They still have the meat recipe archived and will dig it out when we get to that point. Tomato topping was semi-pureed with a bit of sweet onions added. I got lucky and was able to closely replicate this stuff. I have been in communication with several of Robs family members who support this effort and have been most helpful. We need to find someone who has knowledge of the spices Rob used. No one will know the exact ratios, but we have some people who can approximate those ratios through experimentation. We just need a list of seasonings. I understand Susies in Morton serves a similar taco. They confirm this but acknowledge the recipe and ingredients are different. I have not personally tried one yet. I will soon! Pepe Taco food was tasty, excellent and unique to Peoria. For now I am focused on replicating the tacos. My first visit to Pepes was at the original Western Avenue location. I went there and to the University location too many times to count.
