I ate out three times this week, and two of those times were the first time I had visited those restaurants. Last Sunday I visited Los Vaqueros Mexican Restaurant with a friend and ordered their Build Your Own Enchilada place for $9.99. Of course we were served with complimentary chips and salsa before we ordered, and we enjoyed chowing down on the flavorful salsa, spicy with a generous helping of cilantro. For my entree I ordered a cheese enchilada. a veggie one and a spinach enchilada, with three different sauces: sour cream, cheese and green sauce. The enchiladas were very good, and the sauces set them off nicely. The rice that came with the order was typical spanish rice, nothing special, and the refried beans were a touch too salty for my taste. But the enchiladas more than made up for the not quite up to par sides. I would definitely go back again for another taste of those enchiladas! For you carnivores, you can also order the enchiladas with several kinds of meat fillings. Thursday I met a friend at Brown Egg for lunch. I ordered their egg salad sandwich. A generous serving of egg salad on freshly made bread, with lettuce, tomatoes, onions and pickles, was brought to the table. Yummy! I ordered bagged chips on the side. Flavorful comfort food, and the folks at the Brown Egg are always friendly. Today I visited The Wheelhouse food truck, which was parked in the lot outside the Cake Pop Company. This was their first day serving food, and they just had a limited menu. I ordered the Veggie Burrito for $4. A whopping burrito it was, filled with beans, rice and veggies, plus cheese--the server asked if I wanted it vegan, but I asked for cheese, pleased that he gave me a vegan option. Chips and salsa were served on the side, and the take home container was made by Tater Ware, GMO free, bio based and recyclable--another plus! I am looking forward to visiting The Wheelhouse again when they find a permanent location and serve a full menu, which will be a nice combination of Mexican food and Thai dishes. They will be offering many choices that can be made vegan or vegetarian, which is something that is definitely needed here in Springfield.
