I baked my first glutin-free cake last night. I bought one box of glutin-free, yellow cake mix--NOTE TO SELF--if I ever make another one of these, I need to buy two boxes of cake mix and make the cake 4 layers high. Each of the two layers baked out to less than an inch tall (each one, the height of a really fluffy pancake). I even had to find a Vanilla flavoring that was glutin free (not all of them are). I had to stop myself from flouring the baking pans before pouring the cake mixture into the pans (theres Glutin in flour). So the bottoms of the pans got greased as if I was cooking cornbread. Hmm--wonder if an iced cake of cornbread tastes any good. Good news, cake icing is glutin free, so I used two containers of cake icing to building up the height of the cake to grand total of about 3 inches. I really piled the color sprinkles on top to make it just a little taller. Hope it tastes OK, in case it doesnt I also bought some ice cream--Neopolitan for those who are choosey about their flavor of ice cream. How did we ever survive, growing up with things like glutin, peanuts, and glutin-filled vanilla flavoring?
