I bought some days ago some artichokes and I felt really bad to though away the external leaves.. I promised to myself not to do it anymore. So here a collection of all the recipes I found plus one I invented for you to keep in mind if you have ever had my same problem. This is a menu proposal with the external artichokes leaves so that you will not have again the excuse to through even one leaf of this special vegetable. Starter 1: Artichoke soup Put the leaves and the steams in a pan with water, cook them for at least 40 minutes. Mix with a blander and put the sauce in a colander to remove the fibrous part. Add cheese, pepper and cubes of toasted bread. Starter 2: Tempura Artichoke Fry in extra virgin oil the leaves and the steam put salt and pepper and voila’ ready! Main course: Green crunchy Pasta with mussels and Caprino cheese Ingredients for 2 people: - 180 gram of pasta - 500 gram of mussels - external leaves and steams of 2 artichokes - 1 garlic - Seasoned caprino cheese Sliced very thin the leaves and stems of the artichokes and the garlic put in a pan with extra virgin oil and fry adding a few drops of lemon juice. In another the pan throw the mussels without any seasoning and, over high heat, open them with the help of a lid. Boil Pasta in water with few salt. Once that it is ready add the mussels and the fry artichokes. Indeed add the Seasoned caprino cheese julienned. Second Course: Flan with Artichokes Leaves Ingredients for 4 people: -External leaves and the stems of 5 artichokes -1 egg -grated cheese -dry bread crumbs soaked in milk -butter -salt and pepper Wash better the leaves and the stems. Cook them in a pressure cooker with a little water for about 20 minutes. Drain the leaves and stems. Coarsely chop the leaves and stems, then mix with the blender. Combine the obtained cream with the egg, cheese, bread soaked in milk, salt and pepper. Put the mixture into one bowl that you will place in a pan filled with water. Bake at 180 degrees for 30 minutes. Serve with fresh sprouts, julienne red beets, fresh corn salad with raw onion rings. To drink.. Artichoke Tea: Leave the artichokes leaves in hot water for 20 minutes and add the juice of half lemon. For the more brave some flakes. Dessert: Golden Artichokes Leaves Fry the artichokes external leaves till when they are golden and crunchy, soak them in melted chocolate and when the chocolate is cooling down but it is still warm roll the leaves in golden brown sugar.
