I came across this recipe and just had to share it! I must say, it was the picture that first drew me in… I love all kinds of squash and Acorn Squash is everywhere right now, so pick some up and give this a try. I think you’re going to love it! Sliced acorn squash makes a perfect ready-made hole for your egg! Don’t bother to peel it, just carefully slice the squash into rings, take out the seeds, brush with a little olive oil (or spray with non-stick cooking spray), season with salt and pepper; roast in the oven at 400F for about 20 minutes. Then gently crack an egg in the center of each ring and return to the oven for an additional 10 minutes or until the eggs are set. Top the eggs/squash with finely chopped walnuts the last few minutes of baking and finish with a drizzle of maple syrup (highly recommend Walden Farms Pancake Syrup -VERY GOOD!) or top with parmesan cheese and fresh herbs. *Do ahead tip: You can roast the squash ahead of time and finish the dish later… When you’re ready to eat it, place the roasted rings in the bottom of a sauté pan (sprayed with non-stick spray), crack an egg in the center and cook on low heat partially covered. - Carolyn King, RD
