I could talk all day about why I love Jamaica but this is a perfect explanation! I was talking to one of the chefs about cooking jerk. I have used best brand of seasoning according to them, but I said something still was missing or it was my cooking skills! She asked me if I was grating pimento seeds since. I likely had no access to pimento wood to grill over, I hadnt and didnt know to. She explained how to grate and add, I said Id try to find some. Two days later a man I had seen every day here painting came up and said I have something for you. It was a bag of pimento seeds. He said there is a pimento tree near my bus stop and I heard you talking about wanting some pimento. I wanted you to have something to remember your time in Jamaica. This man paints all day at resort refreshing rails, planters, everything constantly being abused by the sun, saltwater, and guests at resort. He wasnt selling me anything, stands to make nothing from his kindness.
