I did end up making some ice cream today, using the last of the raw milk Id bought a couple of weeks ago. The milk had slightly soured but was not too strong so I used it anyway. Remember, RAW milk that has soured is perfectly safe to consume and is even MORE beneficial because of the higher level of probiotics. Do NOT ever consume soured pasteurized milk as it is unsafe and is only good for pouring down the drain at that point. So anyways, what I ended up with is a slightly sweet, slightly sour, probiotic, mint ice cream that is delicious!
