I did not realize that I tend to make most dishes “more healthy” by adding some ingridients, like in my pasta. Here is a simple recipe on my lunch today, hope you’ll like it! And if you are a vegeterian you could use quorn instead of meat. For 4 portions 500 g of minced meat (or quorn). I used low fat beef (nötfärs) 1 yellow onion 1 1/2 garlic cloves 4-5 large mushrooms 50 g chopped sundried tomatoes 1 package (500g) of crushed tomatoes with basil, or any other herb 1 package (400g) of beans, I used a bean mix with kidney beans and some other beans 1 beef stock cube, 1/2 chicken stock cube Some salt and pepper, if you feel like you need it 1-2 handfuls of chopped spinach Wholegrain pasta Just hack the onion and mushrooms and press the garlic, then pan fry it in some oil or butter until it is soft. Add the meat until it have gotten some color. Add the sundried tomatoes, crushed tomatoes and beans. Stir all together and then add the stock cubes. When the minced meat is done, taste and add some seasoning if needed. Last thing to do is to add the spinach, done! If I had some carrot at home, I would have added some shredded carrot also. Serve with wholegrain pasta for example
