I dont agree with Katz on everything, but this is an excellent editorial in response to Gary Taubes recent piece in the NY Times. Contrary to what Gary wrote, we DO know what causes—and prevents—obesity. The problem isnt lack of knowledge; its behavior change and a food/lifestyle environment that promotes obesity. All traditional cultures that eat a whole-food, Paleolithic-type diet and are physically active throughout the day are lean and fit. Obesity ballooned in the U.S. as calorie intake and processed food consumption increased. Its not that hard to understand.
