I dont even like peanut butter cookies, but I cant stop eating these. I usually like to follow a recipe pretty closely, at least the first time I make something, but these I made much more carelessly. All of the fawncy ingredients -- unsalted cultured butter, unsalted peanut butter, coarse sugar -- puh, didnt have that stuff, made em anyway. With Crunchy Jif, regular sugar, salted butter. Didnt have a small cookie dough scoop -- my utensil drawer is already packed pretty tight -- WHO CARES?! Use a spoon! We did have coarse Kosher salt, and that tops them deliciously. Mine spread a bit more than the ones seen here, more like grocery store Pecan Sandies. Theyre large, and salty-sweet and delicately crumbly. Two of them made a nice breakfast. What? They have protein and junk.
