I dont like strawberry jam very much. I think thats why Ive had such a hard time making this huge amount of it. I dont want to keep tasting it and I get frustrated that it wont just freaking set!!! 37 jars didnt set, they were pretty much red colored water....I reheated them added more sugar (which required more tasting) and more pectin....still too runny. I resorted to adding cornstarch. In the end, I think about 25 will be the right consistency but Im not sure about the other 12 jars. I think they will be thick enough to call preserves. They taste the way they are supposed to (I cant really say good, since I dont like it), so I think it will be ok. Ill have to think about if Im just going to redo those ones. I still had 2 more batches of prepped fruit so I heated with the sugar and lemon juice, while I went to consult a different recipe, then I got distracted on Facebook and managed to boil it over the pan. Yeah thats not coming off the stove top without some special cleaner. But Im glad to say I finished all the strawberry jam I had fruit for. And Im not making anymore strawberry jam! The rest will have to be a fruit I do a better job with!
