I dug through my cupboards tonight and came up with an apricot dijon pork chop that was pretty outstanding. It was gobbled up before I even got a picture! I will definitely be making again (even though I improvised the first time): Browned 4 pork chops in a pan in a few tablespoons of olive oil - about 4 minutes each side. In a bowl, I mixed a cup of white wine, about 1/3 cup apricot preserves, 1/2 teaspoon ginger powder, and a tablespoon of stone ground dijon mustard. When the pork chops were finished, I removed them from the pan and added my mixture. Let boil then reduced heat and stirred until it got nice and thick like a glaze. Added my pork chops back in the pan and flipped and glazed until I was ready to serve. Took me about 12 minutes start to finish. Served with rice and sauteed rainbow chard. YUM!
