I fixed a Blue Berry Cobbler for Kathy last night. Its not a traditional cobbler, but I call it that any way. Recipe:... 1 cup flour, 1 cup sugar, zest and juice of 1 lemon, 1 1/2 teaspoons baking powder, 1 teaspoon vanilla flavoring whisked in a bowl. Add 1 cup of milk, ( you always add wet to dry) whisk until smooth. In a cast iron skillet, about 11 inches, melt 1 stick of butter. When butter is melted, add batter to skillet, sprinkle 1 carton of blue berries all around the batter. Place in pre-heated oven (350 degrees) for 30 to 45 minutes or until crust is firm and browning. Easy, simple, and delicious. Taste the blue berries, it tart, and some sugar to them before putting in batter. / Chef (wanna be) Robert
