I had a couple of hours to spare this afternoon and thought I would try my hand at making Roti bread. I had bought myself a chapatti board with a lovely design on it which leaves an indentation on any dough you roll out. This recipe for Roti is so easy that Im sorry Ive not made it before today. Of course great to eat with any curry but tonight I used the roti as pita bread for our souvlakia. What you will need: 2 cups plain flour 3/4 cup water 1/2 teaspoon salt 1 tbsp olive oil Combine all ingredients and mix well Turn onto your bench and knead until smooth. This will take around 10 mins. Cover and let rest for 30 mins - cover with a damp towel Divide dough into 12 parts Flatten balls with the palm of your hand and roll out each piece with a rolling pin into aporox 20cm rounds Spray a frying pan with a non-stick spray Place a round of dough into hot pan and let it cook for 1 min Turn over and cook for another min The roti should have some dark brown spots when cooked through Enjoy with a curry or as pita for souvlaki ENJOY!!
