I had a great baking weekend but ended up with two un-answered questions: 1: my breads had a great oven spring but rounded up on the bottom and ended up a bit like an UFO. The same happened with my batards. The dough had a 70% hydration, rather wet dough. 2: i dont get the nice open crust after baking in the oven. I tried several slashing methods but i dont get the beautiful results i see often on this page. Thanks so much for the help
