I had a nice Lunch ... I cooked COQ AU VIN ... with Neils Fingers ... ay mali !!! ... I mean LADIES FINGERS ( OKRA ) ... ( kasi may word na COQ, eh ) ... anyway ...I used my left over White Wine ... I chopped some Bacon left over ... Fried with chopped Onion &, Garlic with Chicken Thighs ... put some Ketchup, Soya Sauce, a bit of Chili Oil ... I did not put anymore Salt ( enough for my Taste ) ...poured the Left over Wine & I let it Boiled for about 10 - 15 minutes ... then I put the diced Carrots, Okra & diced Gherkins ... let it Boiled for another 10 - 15 minutes ... what a Beautiful consistency of the Gravy ... PRESTO ... YUM YUM ... with Boiled Rice ( I havent eaten Rice for 2 weeks ) ...what a TREAT to myself ...
