I had mentioned on the Stages at One Washington page about how our recent Ecosystems dinner/menu opened many doors... Im ready to walk through one of them. But, Im not going alone... my great friend Enna Grazier and I are embarking on a journey that will take at least 2 years to complete. We are starting on a book. Not a cookbook in the traditional sense. More of a story, a story of our lands, farms, ocean, mountains and forests told through food. Our food here at Stages has changed, and moved towards creating a sense of time and place here in NE. Weve always let the ingredients drive our menu here, and this will be an opportunity to really show our area. Through Ennas stunning photography and my cooking philosophy, we will create a book that will harness the feelings, the traditions and the future of our great area. I am so excited for this, I think that it is well timed and when ready will create waves in our respective industries. Enna... ready to jump? Me too!
