I had no intention of sharing our breakfast this morning because it is nothing out of the ordinary, but my husband said it was one of his favorite breakfast creations I have come up with… not really a creation because it is just eggs and sautéed roasted red peppers (I sautéed them in ghee), but the dish is really full of flavor. You will see from the second picture that they didnt really flip well, but I wanted to share so you dont discouraged if yours dont flip well either :). Red peppers are really good for you, here are a few reasons why: - Contain almost 300 percent of your daily vitamin C intake. Besides being a powerful antioxidant, vitamin C is also needed for the proper absorption of iron. If you are iron deficient, try combining red peppers with your iron source for maximum absorption. - Great source of vitamin B6 and magnesium. This vitamin and mineral combination shows a decrease in anxiety. Vitamin B6 is also a natural diuretic, which can help to reduce bloating and prevent against hypertension. - Packed with antioxidants. The combined effects of vitamin A and C create a great antioxidant capacity, and with lycopene in the mix, the red bell pepper is a top notch superfood. Lycopene is what makes tomatoes and peppers red.
