I have been asked to post this by a friend. I have been tweaking this recipe for a few years. I havent named this recipe yet. I have given it an unofficial name of Hawaiian Mushroom and Swiss Chicken. I would like help giving it a name. Help me by posting a name in the comment section. Please feel free to tweak this recipe to your taste. Comment on what you thought and also share any changes you made. Ingredients 4 Boneless skinless chicken breast 1 medium sweet onion 8 oz pack of fresh mushrooms 2 tablespoons of red wine vinegar 1 tablespoon of minced garlic. 1/2 can of cream of mushroom 1/8 cup of water Salt to taste 2 green onions diced for topping. Baby swiss cheese. 4 slices of pineapple Step 1 Put a little olive oil in skillet to keep onions from sticking. Put butane stove on med low heat. Slice onion and put in skillet with mushrooms. Add red wine vinegar and cook down to 80% done. Set aside on a plate. Step 2 Put 4 slice of pineapple in skillet on med heat. Cook on both sides until slightly brown or to your liking. Set aside on a plate. Step 3 Add olive oil to skillet set to med heat. It important that the pan is hot enough to sear in juices. Other wise the chicken will be dry. After both sides are seared, finish cooking by turning regularly till done. Dont over cook. Set aside on a plate. Step 4 Take cooked onions and mushrooms and put in pan on medium heat. Add half a can of cream of mushroom and 3 oz of water. Too much water will make it too runny. If this happens just cook down with lid off until desired thickness. Step 5 Evenly space pineapple slices on top of onions and mushrooms then set a chicken breast on each slice. Cover with lid and cook on medium low heat for 5 minutes or until good and hot. Step 6 Serving Take spatula and remove pineapple and chicken at once and put on plate. Cover with mushroom and onion sauce. Top with slice of baby swiss and diced green onions. I also cooked asparagus and wild rice to add a good round flavor.
