I have been asked why does Pork Butts Bar-B-Q serve sauce on the side, instead of drowning the meat in it like everyone else ? Here is my response, In reality if the BBQ requires sauce to taste good then the cook needs more practice smoking meat. I do not serve sauce on my BBQ, I serve sauce on the side. Nothing wrong with sauce but it should be a compliment to the meat not a replacement for lack of flavor
