I have been wanting a good salsa recipe for a long time...may have to give this one a try this summer. CANNED SALSA 18 Cups tomato (blanched, peeled, diced) 8 green peppers 1 lb onion (6-8) 4 Tbls canning salt 1 lb. jalepeno (or to taste, we love HOT, use more & different kinds....habenero, hot banana, ghost chili, etc) 2-3 cloves of garlic, minced 6 Tbls. Vinegar 2 Tbls. Lemon Juice Tobasco sauce to taste Fresh Cilantro to taste **I also usually drain some of the juice so that it does not get too runny and/or use 1-2 cans of tomato paste to help thicken. **Cook for 45-60 minutes, fill jars, and process..... HOT WATER BATH PROCESSING BASICS!! Since posting my salsa recipe, I have received several messages asking how to process the jars.....so, thought I would share my 6 new jars of salsa processing right now...and how I process them!! Salsa calls for a hot water bath process, which is really very simple... Always use clean jars, making sure there is no debris inside OR on the lip of them. 1. Fill the jars to about 1/4 from top with HOT product (salsa or jelly). 2. Using a wet paper towel, wipe the rims of the jars clean. 3. In a small pan of boiling water, boil the inside lids (with the rubber seal) for about a minute to soften the rubber. 4. Put the hot rubber ring on the jar, then tighten the outer ring onto the jar. Then, slightly loosen the outer ring, and hand tighten it just barely tight. (This will allow the extra air to escape during processing AND will make the jars much easier to open later). 5. Put the filled jars into a water bath, with the water completely covering the lids about 1. 6. Bring the bath to a full boil, and continue to boil for the amount of time necessary based upon the size jars you are using. Make sure the jars remain completely covered by water. Typically process times are: Jam/jelly jars: 15-20 minutes. Pint jars: 20-25 minutes. Quart Jars: 40-45 minutes. 7. Remove jars from water bath and place on towel, NOT TOUCHING EACH OTHER. DO NOT, I REPEAT DO NOT TOUCH THE TOPS OF THE LIDS UNTIL JARS ARE COMPLETELY COOLED. As the jars seal, you will actually hear them pop. Once jars are completely cooled, you can gently press on the tops of the lids to be sure that they sealed properly.
