I have been working on feeding myself & my family healthier meals because we had gotten stuck back in the rut of convenience foods. .yuck!! Today I tried a recipe a friend posted because 1. it looked healthy & delicious & 2. I had a boatload of discounted $2 ripe bananas to use quick! Oh mgoodness these breakfast cookies were soooo good!!! Ingredients: 2 bananas 2-3 Tbsp peanut butter 1 Tbsp honey (optional) 1 C Oats 1 C Brown Rice Puffs Sprinkle of dark chocolate chips Directions: Preheat oven to 325. Mash bananas. Mix in peanut butter, honey, oats, & rice puffs. Fold in chocolate chips. Place on a baking sheet & bake until toasty on top & slightly firm to the touch. I baked mine on a stone for about 17 mins...lots of checking & re-checking!! Just a note: I have been using up the not-as-healthy food items in our pantry before replacing them with healthier alternatives...organic, non-gmo, nutrition-packed whole foods. There is no reason to waste anything! Some items pictured are among the best available to me, some are still waiting to upgrade, all were delicious:) Thank you so much for sharing this recipe, Tabitha Groh!
