I have leftover chicken, heres what Im doing with it for lunch today.... 4 chicken breasts cooked and shredded 1 container Plain greek yogurt 1 cup pico de gallo – (I get fresh from the store or if they only have tom and onion, I just add some cilantro and a chopped jalapeno.) 1 avocado mashed Pepper Fresh lime juice to taste NOTE: Play with your macros and see how much you need and how much of this you want in your menu for the day. It will not keep well, so best to use it in a couple days. If it turns a little brown, just mix it up. It will taste the same. You can easily half the recipe - which is what Im doing but I made it friendly for a full container of yogurt and higher protein needs than mine. Or, you can even leave out the yogurt entirely (which might help with your macros) - remove yogurt/reduce to 2 chicken breasts/1 avocado and you may want less pico depending on your preference. Play with it, but it has a lot of good flavor! INSTRUCTIONS: Add everything except the chicken to the mashed avocado. Taste it and see if you need more pico/pepper/lime, etc. (I usually use a whole small lime.) When you are happy with it, mix in the shredded chicken. Ready to eat! I use it on toasted Ezekiel bread, but you could use it in a wrap and add additional veggies that you want, etc.
