I just want to say.... This is the best chicken Ive ever made in my life. It was absolutely delicious. The lasts was really good too lol. Also, it was super easy! Sorry, I ate half the chicken before I took the picture haha Ingredients: -A little less than 2 pounds of boneless, skinless chicken breasts -2 cups of arugula or baby spinach -Zest of 1 lemon -3 Tablespoons of herb garlic butter -8oz of angel hair pasta -1/4 cup AND 1/3 cup grated Parmesan cheese -4 teaspoons of Italian bread crumbs -2 tablespoons of extra virgin olive oil -1/2 cup mayo -1/2 teaspoon of kosher salt How To: CHICKEN: -Preheat oven to 425 degrees. -combine 1/2 cup mayo and 1/4 cup of Parmesan cheese together. -put chicken on baking sheet and top mayo mixture evenly on top of chicken -sprinkle bread crumbs on top of chicken breasts -bake for 15-20 mins PASTA: -bring water to boil -cook and drain the angel hair pasta -combine in a medium bowl, 3 tablespoons of herb garlic butter, 2 tablespoons of extra virgin olive oil, and lemon zest. -stir in pasta until butter melts -stir in remaining ingredients (1/3 cup of Parmesan cheese, 2 cups of arugula or baby spinach, 1/2 teaspoon kosher salt, and 1/4 teaspoon of pepper. Ready to serve!!
