I know a lot of you are preparing big feasts over the Christmas period and Id like to share a few tips with you on how to be food safe and avoid food poisoning: 1. Laying out a Christmas feast is a great tradition but it can also be an invitation for bacteria, a good rule of thumb is that anything that is left out for more than 2 hours should be used immediately or thrown out. 2. Make sure you store your food in sealed containers or cover well with cling wrap and return them to the fridge as soon as possible. 3. If you have hot food leftover, cool it in the fridge straight away rather than leaving it on the bench to cool. 4. I know it can be tricky with kids but try to minimise the number of times you open the fridge door, changes in temperature can cause bacteria. 5. Avoid overfilling your fridge and chill your drinks on ice in an esky. 6. Food should only be frozen once, never refreeze food.
