I know everyday is noodle day for the noodle obsessed like me... but when there is ACTUALLY a special Noodle day, I have to go for it. Soba is a traditional New Years Eve meal at home. You can pick up fresh soba at Ichimi Ann and the various Japanese markets carry special fresh soba varieties. Well at Mitsuwa, they had their lovely THICK soba... so I had to buy it... SO GOOD. Soba has a tendency to get pasty, that is why it can be a bit risky to get it too thick... But this cooked up wonderfully (2 minutes in a rapid boil, cold water rise and theen ice water bath. I used the dipping packets as the basis of my broth. I added the two packets and then two cups of water, grated ginger, thin slices of king mushoom, lightly pickled lotus root (for brightness) and Charsu (for richness). The combo made an excellent meal to end OR start the year! :D
