I love a shortbread with my coffee, especially the one made by Claudia at our cafe. Here is the very simple recipe for our Wattleseed Fingers: Wattlessed is made with seeds harvested from the Acacia Victoriae (Elegant Wattle). The seeds are roasted. The flavour is a mix of hazelnut, coffee and chocolate. It is a very versatile ingredient, excellent in a broad range of sweet and savoury applications such as casseroles, curries, breads, dampers, cakes, biscuits, pastries, scones and pancakes, dessert sauces, ice cream and cream Ingredients: 250 g butter 1/2 cup caster sugar 2 tbsp wattleseed (available from Flavours of Oz, flavoursofoz.au/shop) 2 1/2 cups plain flour 1/2 cup rice flour Method: Cream butter, sugar and wattleseed. Mix in remaining ingredients. Spread mixture into a baking tray, cover with greaseproof paper and press into a slice about 1 centimeter thick. Bake in moderate oven for 30 minutes. Slice while still warm.
