I made Spanish eggs today. I have not eaten that dish in years. Used to make it for my Daddy at LEAST once a week. They tasted so good. I need to remember this for future days when food sounds iffy to me. :) I would think most of you know how to make this and probably call it by other names, but this was a part of my childhood. SPANISH EGGS; 2 eggs 1 or 2 slices of bread toasted to a good crunch. 1/2 to 1 cup of diced onions depending on your taste 1/2 cup of diced bell pepper (red or green or both) 1/4 cup of butter. 1/2 can (about a cup or so) of petite diced tomatoes Toast the bread and leave it in the toaster (it continues to get a nicer crunch) after its popped up. Saute the onion and bell pepper in the butter. Add the tomatoes and bring to a simmering bubble. When the mixture is hot and bubbly, break two eggs into the hot liquid, salt and pepper to taste and cover with a lid until cook until the eggs are how you like to eat them. I hate yolks that arent cooked so...... :) Once the eggs are done, take the toast out of the toaster and cut it into bite-size cubes on a dinner plate. Spoon the eggs and tomato mixture over the toast cubes and dig in. Of course you can make that spicy by adding jalapenos or hot sauce or anything you like, BUT I dont like that so this is how I make it for me.
