I made a bit of a spin-off of a recipe that was posted here earlier. I cant find it now, but thank you to whoever posted it for the inspiration of something to make for supper. My husband and my son thank you also! Here is how I made the creamed sausage and dumplings: Saute 1/2 cup diced onion and 1/2 cup chopped celery in 2 T of butter till onions are soft. Cut a rope of country style sausage in 1/2 inch slices and fry that with the onions and celery till sausage is almost done. Add 3 cups diced potatoes, 1 cup sliced carrots, and enough chicken broth to cover sausage and vegetables.. Add salt and pepper to taste. Cover and simmer till vegetables are done. Add 3/4 to 1 c. cream or half and half to broth, depending on how creamy you like your gravy. Mix 1/4 c flour with a little water to make a runny paste. Stir in to broth and cook until gravy is thickened. Place biscuits (either rolled or dropped by spoonful) onto top of gravy. Cover tightly and simmer for about 20 minutes without lifting lid, till biscuits are done.
