I made some Moonlight Quince Pear Compote with Chocolate Mint. I started with a Martha Stewart recipe for Quince Butter just because I had no idea what to do. Well, that was too boring! Here is what I did, more or less: 1.Peel/seed a bunch of quince. I had all different sizes and it was a bit of a pain. I put on music to cope! 2. Medium heat in pan: quince cut into small sections about 1/4 as many sectioned pears as quince some pear nectar and water to almost cover (my batch was small, maybe 2 cups yield) 1/2 tsp more or less lemongrass 2 tbsp. more or less coconut water 1/2 c more or less granulated sugar 2 tbsp. brown sugar I got this all simmering med/high about 25 minutes. Then I lowered heat to lowest and let it simmer for about 1 hour, 15 minutes. It could take a bit more, a bit less. You want it to be pretty soupy but there will be chunks which should be soft. When cool, taste the compote. Quince are tart! Adjust the sweetness to your liking with honey, sugar, brown sugar...your fav sweetener! If you have a sieve, use it when you feel the mixture is cool enough. My kitchen supplies are all packed up and hard to find so I used a slotted spoon and smooshed the mixture through with a big metal spoon. You could use a blender, food processor, your feet, whatever! I wanted some small chunks to remain. Lastly, I added chopped fresh chocolate mint from the garden! I used the compote with some chopped melon for breakfast. YUM! I am also going to frost some carrot cake cupcakes! Be aware the Baby Moons recipes all have SECRETS!!! One which I will reveal here is that I harvested the quince at midnight under the moon. Does it make a difference!!?? Maybe, since I was so calm in the fresh, cool air, so relaxed it could only affect everything I did! Enjoy!
