I made the most delicious curry ever last night. 6 Carrots sliced 1/2 inch slices 6 potatoes sliced in 1 inch chunks boil separately till tender. 3 chicken breasts in 1 inch by 1/2 inch pieces, marinate in 1 tbsp lemon juice while taters and carrots cook. Olive oil in pan - hot - pop the chicken in and stir till done, add 1 tbsp or more or less favorite curry powder or paste. I use the salt free from the WF Coop in Duluth. Stirr the curry powder to open the flavor and coat the chicken. Pour in the potatoes and carrots with at about 2 cups of their juice/cooking water. Add 2 cups frozen spinach and 1 cup peas. Add a can of coconut milk. Stir. Salt and pepper to taste. Mmmmmm Mmmmmmmm Mmmmmmmmmmmm
