I made these Lemon Balls last night... recipe needs a little tweeking... but not bad! Lemon Ball Recipe 1 cup almond flour 1/2 cup freshly ground flax seeds 1/2 cup tablespoon organic raw coconut flour 3 squirts stevia extract (liquid) - I like them on the tart side. 1/2 cup organic lemon juice freshly squeezed) - 2 large lemons Lemon zest from two large organic lemons 1/4 cup organic coconut oil, melted 2 teaspoons organic vanilla extract 1/2 teaspoon pink himalayan sea salt coconut to roll in plus a little lemon rind Directions Put all ingredients into a food processor and process until well combined. Check the consistency and add an extra 1 - 2 tablespoons of almond flour or ground flax until they are firm enough to roll into a ball. Take out about a spoonful at a time and roll them in the palms of your hand into a ball shape. Leave them plain or roll in shredded coconut flakes, raw cane sugar, almond flour, or powdered sugar (not raw). Put them in the refrigerator to firm for about 10 - 15 minutes. Keep them in the refrigerator until ready to serve because they will get soft if left out at room temperature as the coconut oil melts. They have the consistency of raw cookie dough - next time I will add slivered almonds to give it some texture and a few drops of YL Lemon Essential oil to give them even more of a lemon pop! I think some dried apricots would also be good.
