I made this meal tonight and I would suggest that anyone trying to lose weight and build muscle, give quinoa a try. I could write a book about the benefits of quinoa; but, I will save you guys a long read and summarize. It is a complete protein, which means that it contains all 9 essential amino acids. Those aminos are vital to human growth and development. (This is where those who are interested in this type of thing, will do a google search 😜) One of those, Linoleic Acid is an EFA that helps improve immune response-great for Jack and the whole family.It is also gluten free and comes from a seed instead of a grain. It is a nutrient rich food, containing high levels of vitamins and minerals. Its high Magnesium content interests me for my husbands heart issues. Magnesium helps lower blood pressure, by helping small muscles that clamp down on blood vessels relax. Quinoa is full of protein, high in fiber, and a low glycemic food--meaning that it wont cause insulin spikes. The recipe below also has black beans, which is another complete protein. I used lean ground beef instead of turkey and I didnt use cheese. I also used Moms fresh garden salsa. This meal was amazing!chelseasmessyapron/slow-cooker-cheesy-enchilada-quinoa/
