I originally developed this recipe as a gluten-free stuffing for a big assignment I had for Dr. Oz & Natural Health magazine’s Thanksgiving issue a few years ago (it was the first magazine cover issue Dr. Oz was on!), but it is really a great side dish that can be enjoyed anytime from October to January when pomegranates are in season. My assignment was to incorporate ten superfoods into a full Thanksgiving feast, in this case for the gluten-free stuffing I used kale, quinoa and pomegranate seeds. By adding the pecans, sage and thyme I was able to pull together a surprisingly very “Thanksgiving-ish” flavored dish!
