I placed an order for several Silpats: 4 half-sheet mats, and 5 quarter-sheet mats. I will use my Silpats at work. The primary utility for the half-sheet mats will be for Baking, and the primary utility for the quarter-sheets, will be for Hand-Dipped Chocolate Confections. I have found that, especially for Tuiles, parchment paper yields baked goods that are unevenly cooked, and that have a subtly burnt, crusty mouthfeel. Silicone evenly retains heat and cold, and as such, bakes much more evenly than a layer of parchment paper can. The difference between baking on parchment paper, and baking on a baking-specific silicone mat, is like night and day. And, silicone baking mats will not fly off of the sheet-pan, when the oven fan shall run! This is a key advantage, to the silicone baking methodology! And, I will use the quarter-sheet mats, for the production of Hand-Dipped Chocolate Confections. Chocolate shells, as well as the associated molds, both stick to cold sheet-pans, but not to a clean silicone mat that rests in the sheet pan. . . Now, I may concentrate in full fidelity, upon The Mechanisms, Of Baking And Hand-Dipping. For a while now, I have been struggling with time efficiency for my Baking responsibilities at Marigold. With my Silpats, I will be able to focus upon good technique, and not wrestle with a sheet-liner to which I do not take so kindly, for a handful of reasons. I will soon be able to craft The Baked Goods, and The Hand-Dipped Confections, with considerably greater precision accuracy, time-efficiency, and space-efficiency. . . I value my time, immensely so, and I am very critical of the quality of my work. This is my undying devotion, to Discerning, Qualitative Workmanship. I want to create the best that I can, most swiftly and gracefully, and as such, I can justify the calculated, long-term investment in Silpats. ### . . Pride In Ownership.
