I recieved a few messages overnight asking me why, since Im gluten free, does the rest of my family continue to eat grains. So Im replying en masse. The answer is a simple one: I have a medically diagnosed gluten sensitivity. My family does not. I believe that properly prepared whole grains are a good addition to their diets. Do I believe there are TONS of Americans with gluten sensitivities now? Yes. Because of GMOs and modernized wheat with higher levels of gluten, tons of Americans can no longer properly digest wheat. Do I believe that gluten-free is a fad diet? Yes I do. With the promise of weight loss that comes with going GF, I think many people are needlessly giving it a go. But the flip side of this is that GF products are showing up on a daily basis and they are chemical crap storms. GF DOES NOT mean healthy or whole. And you saw my alarming post on rice yesterday, right? I have been gluten free since November 2013. My diagnosis felt like a prison sentence at that time but Ive learned to embrace it. But here is my key message: Ive lost weight on GF and Ive gained weight on GF. GF is not a magic wand for weight loss. Nope. You need to expending more energy than you consume in calories. Period. If you eat GF and realize that its making you feel SO MUCH BETTER - better mental clarity, less digestive issues, less aches and pains - then chances are yes, you are GF sensitive. And then maybe youll be like me and realize you feel TWICE AS GOOD on a completely grain-free diet. But if you dont feel any change at all, look for whole grains to incorporate into your diet. Have you tried teft? Farro? Quinoa? Bulgar or barley? If not, go for it. There is a whole world of traditional nutrition waiting for you out there.
