I remember several weeks ago we had a discussion regarding which works best for breading meats, without losing the breading during frying. Many recommended the use of pork skins which I do not like for its taste..so I have tried several different nut flours and I like cashew meal by far the best. As you can see I have hardly any loss of breading during frying and to me it tastes fantastic. I used Cashew Meal from Trader Joes and I dipped chicken in egg and then in cashew meal that I had added seasonings to. I fried the chicken in a blend of butter and coconut oil on medium heat.
