I remember watching my Daddy grill out back. There was never any question, it was always charcoal back then. When hed get a really good check in the summertime, hed buy steaks, big and thick and juicy! That was with a crowd of children; wed still knew how to appreciate the good things in life. Mother used to always make salad the same way, basically, with iceberg lettuce, sweet diced tomatoes (for years she felt obligated to peel these), onion, possibly some diced celery, Helmans mayonnaise, salt and pepper...and maybe a little garlic salt. We never had dressing back then; it was too expensive and totally unnecessary. We usually had baked potatoes with butter, salt and pepper to go with the steaks. The steaks would have USDA APPROVED in purple print stamped in their fat across the side. And, dont overcook the steak...it needs a little pink at least. Medium rare is now my favorite and I want a ribeye, just in case you are having us over...my Mother always served sweet iced tea with lunch and dinner. We never expected any different. The breeze would blow in the dining room window and you could smell and hear someone out cutting grass and children yelling in the neighborhood. Where are all the children now? We used to know everybody on Louise Street in Hapeville. Now, I dont really know my next door neighbors. Its so different. Mmm. Can you smell the steaks?
