I think the fall season is one of my most favorite times of the year......but only after Ive finished breaking my back raking & hauling away all the leaves that have fallen in our front & back yards!! The temperatures are cool enough that Im actually energized to put all the flower & vegetable gardens to bed for the winter. Unlike my wife, who gets depressed the moment the temperatures cool, I do look forward to the arrival of snow and the ski season. Thanksgiving is just around the corner. Have you noticed that every year the Christmas shopping season gets longer and longer?? How long does it take people to shop anyway?! Its insane! When I was a kid, Halloween was Halloween, Thanksgiving followed shortly thereafter (not overlapping like it is today) and Santa wasnt even mentioned until after Thanksgiving was finished. I know retailers are just trying to survive, but do we really need to see Christmas decorations when Halloween costumes havent yet come off the shelves?! On a more pleasant note, my son Emerson is driving up from Richmond, Virginia to spend time with us. Im really looking forward to his arrival and to catch up with his life events. Well probably catch a few movies and go cut a Christmas tree down (recreating childhood father-son memories!). What the heck is a giblet? Giblets are the catch-all name for the internal edible parts of a fowl; including the gizzard (another great word!), the heart, liver and neck (ok, that one is really external). Lets think about these pieces for a second. We take them out of the bird, place them into a bag and then put them back into the birds empty cavity! Most people dont know what to do with them; choosing instead to threaten their kids with them or feed them to their dog! Please, make gravy stock instead. For All You Vegetarians: How about squash lasagna! Puree some roasted squash with cream cheese and butter, spread on top of lasagna noodles, covered with sautéed, sage-seasoned cubes of apples and more squash, doused in Gruyère-based white sauce, layer with all that stuff over and over again, and then top with more cheese and sauce. Yeah. Youll like this one. No turkey needed! Lets not forget a vegetarian stuffing: Cook your favorite mushrooms down until they are a deep, meaty, sage-seasoned brown. Then you can throw in your onions and celery and whatnot, your delicious (homemade) vegetable stock and crunchy pecans or walnuts. Guess Ill have to settle for meatloaf, baked potatoes and peas or the usual spaghetti & meatballs until the big day arrives.
