I thought I would be very patriotic and cook some ANZAC biscuits for Australia Day! A very dear friend gave me this recipe many years ago, they have been a family favourite ever since. Great lunch box fillers for the kids! ANZAC Biscuits 250 grams butter (not margarine) 3 generous tablespoons golden syrup 2 cups SR Flour 2 cups Sugar 2 cups Coconut 2 cups Rolled Oats or Quick Oats 1 scant teaspoon bi carb soda ¼ cup boiling water Preheat oven to 180° Celsius. Gently melt butter and golden syrup together in a saucepan over medium heat. Mix all the dry ingredients together well. Mix bi carb soda and boiling water together in a cup, the water must be boiling. Pour into hot, melted butter and golden syrup mix. It will froth up, quickly pour into dry ingredients and mix well. Place tablespoonful’s of mixture on trays and bake for about 10 minutes or until golden brown. Makes about 60 biscuits.
