I try to look at this from the perspective of the bread. A loaf should not be considered an isolated or finite piece of carbohydrate, but just the beginning of a journey to seek out every gluten-sensitive individual and to touch their lives. The end, or heel should not in any way consider itself to be inferior the the rest of the loaf as it provides a valuable service to the rest of the loaf by slowing down the dehydration process and serving as a general end-cap skin for the betterment of the entire loaf. Be proud, end pieces, and do not be distracted by the disrespect that is afforded to you by heel-piece tossers or crust-cutters. There are people who love and respect you and are even willing to endure the scorn of taking an unevenly-yoked sandwich of hell and interior bread, a bold statement indeed. I know that the view never changes, but we salute you, brave heels!
