I use my grocery checklist to keep track of what we need, so that we always keep our house (esp. the pantry & freezer) stocked with the basics. Ive been realizing as things get busier with four kids and homeschooling that some days, I just need to have the makings of a simple, wholesome meal on hand so that take-out or convenience foods dont tempt me. A few things I always keep around for easy meals are: milk, butter/olive oil/coconut oil, cheese, eggs, some sort of pre-cooked (chicken or ground beef) or fast cooking meat (like bacon or sausage), potatoes, quinoa (cooks in 25 min.), brown rice noodles, frozen homemade broth, organic canned tomatoes and tomato paste, canned salmon, good mix of spices and herbs. Between these and whatever veggies I might have on hand, I can usually whip up something decent in 30 minutes or less! Does anyone else do this? What ingredients do you like to stock up on?
