I want to be the best I can be. Now this is a very broad statement. There are numerous topics that I could choose from, in what I would like to become the best I can be. And, there are many areas in my life; I like to become the best I can be. For now I’m focusing on the physical being, my health. Let me give you a little background: I was borne in Paraguay, the ninth of 13 children, raised on a farm. Growing up, the most processed food we ate was homemade bread, with homegrown whole grains such as milo; planted, harvested (no pesticides), and grinded on our farm. Corn, sweet potatoes, carrots, tomatoes were all homegrown. Free rage chicken, beef, goat, and pig meat, where all at the disposal for our nourishment. Citric fruit, guava, pomegranate trees where in our gardens. Every Saturday my mom would bake a cake or cookies, (it was a weekend treat), and candies were treats at Easter and Christmas. Those were the ‘good old days’, I have fond memories of. Did I always eat that healthy? No!... ....But in the later years I have become very much interested in healthy living. I have gone through nursing school twice... ...the first time in Paraguay when I was in my early twenties, and then here in the USA a few years ago. Am I indicating that in my nurses training I learned about health? Very little, but in my nursing carrier, seeing lots of un-necessary suffering, has prompted me to become more health conscious. I am choosing as much homemade food as possible, little as possible processed foods, and reading labels, just to mention a few. In closing: ... I like to share a short story about my 11 year old daughter. I have been teaching her to read labels and what is good and not so good, and the bottom line being, the longer the ingredient list the worst it gets. One day when my daughter was with me grocery shopping, I observed her picking up an item and quickly putting it back on the shelf, when I asked her why she put it back so quickly she answered, “the ingredient list is too long”.
