I was just talking with a friend about freezing eggs for later use. I told her to whisk them up a bit with water or milk and put in ziplock bags. This article says to add a pinch of salt to make them less grainy. Salt is a good idea. I have frozen whole in the shell duck eggs for my piggies, but some of them do crack. It really didnt matter in my application, because I gave them as frozen treats or dumped them into a feed bucket to thaw. But for people eating try one of these methods described on this blog from Fresh Eggs Daily. By the way, if kept unwashed and in the refrigerator, homestead eggs will keep at least 7 months. I always do the water test on them and then break them into an individual bowl before adding to the dish I am cooking up. If an egg floats in water, throw it out! If it stands straight up it is fine, and is especially good for hard boiled eggs because the shells slip off easier.
