I was pondering about the good old days and suddenly the memory of a craving hit me like a ton of bricks... my moms old fashioned, homemade lemon merengue pie. Ive never actually made one by myself, but I watched and helped her make many of them all through the 50s and 60s... and as a New Years resolution Ive promised myself to make one just like hers no matter how much trouble it really is. Back then it was my job to take almost a full box of vanilla (Nilla) wafers and crumble them up in a towel with a rolling pin for the bottom crust to be about ¼ thick, and if I remember right it took exactly 18 whole nilla wafers to line the outside of the pie pan. Then Id help squeeze the lemons (the old fashioned way) with one of those lemon twister dishes. What set moms pies apart was she always used a couple more lemons than most folks. She always said if it didnt make your ears wiggle it wasnt made right. She always used Bordens Eagle Brand for the filling and separated all the egg whites for the merengue. For years she always complained that she could never get her merengue to be fluffy enough until she heard about whipping a dab of cream of tartar into the whites in an ice cold bowl. After that those pies stood tall after coming out of the oven just long enough to brown the peaks. Then came the waiting while the pie chilled in the fridge... Is it ready yet? I know she got tired of hearing that. But all the trouble and waiting was so much worth it when you finally got a slab of that lemony, wafery heaven. Using the whole wafers as a guide she always cut the pieces two wafers wide which gave you exactly nine pieces of pie. Sometimes (if I was especially good) shed cut me a three wafer slice, but that would always leave some unlucky late-comer (usually my dad in the middle of the night) with the last thin piece having only one wafer. If that happens to me after making one for old times sake it will be my own fault now I guess, but Ill savor it just the same. This ones for you mama. :)
