I was sitting at the SCG watching the Aussies try and bowl out the fellas from the sub-continent and I received a telephone call from my mate Mitch Davis from Lantern Group. He asked if I would come past The Dolphin Hotel in Surry Hills to try a secret burger. I don’t need to be asked twice to eat secret burgers. The umpires called time and as the players made their way to the sheds for some ham and pickles sandwiches we made tracks for Crown St. Sam, Graham, Fridge and I took a seat on the Dolphin’s incredible balcony in the warm Sydney sun. Chef John took our order of four “Deuce-Deuces” and a serve their breathtaking wings. Wings first and I have told you all this before but I love the wings here. The first time I had them I rated them as possibly the best wings that I have outside of the USA. This occasion was no exception. They are very juicy, plenty of kick and full of flavour. They have the distinct vinegary flavour of a pepper hot sauce softened by blue cheese sauce and celery sticks. Now you almost need a drum roll for this burger… so imagine one before you start reading ok? The “Deuce-Deuce” is a double patty cheeseburger with bacon and a huge piece of fried chicken. Its meatiness is cut through with a slaw, jalapenos and a mustard barbecue sauce. Now a lot of double patties and with a chicken piece are fairly big but this thing was absolutely huge. It came with a serve of waffle fries as well! So the four of us were confronted with some absolute monsters! Served on a brioche bun with crispy bacon it is an amazing construction. The fried chicken is crispy and holds its won against the double Wagyu patties bathed in cheese. The first bite of this monster was amazing. It evoked all manner of decrepit emotions; it is a burger that you could some seriously nasty things with (I just ate it but you know those thoughts, don’t look at the screen like that… you know you think them too). The Dolphin is an absolute ripper of a pub with some great little nooks and crannies to spend time with ya mates as well. Chefs Mitch and John have done some great things with this place.
