I wasnt intending to post tonights dinner. But I. Am. On. A. Rollllll The most perfect chicken ever was created. The 12 yr old agrees. He crossed his eyes on the first bite and then proceeded to wolf down everything on his plate so he could go get seconds before I could deny him. Im posting the pictures despite my overdressed salad and my chipped dinner plate. This chicken was DELICIOUS. If you like lemon drops, you will like this chicken. I know that sounds strange, but hang with me here a second or two, or five, ok, maybe 15. So, I love frozen individually wrapped chicken breasts and fish. Its cheaper and theres so much you can do with them. And if you are cooking for one or four, they come in to help with the budget and make a great meal. So heres the chicken: When I came home for lunch today, I took three chicken breasts out of their packages, put them in a ziploc bag and put them in the fridge to thaw. Of course, they werent thawed by the time I got home. So, I took them out of the fridge on started on Mom Arguiens Amsih Potatoes. If you have never had these.....OMG I have to get her permission to post the recipe. I will just say that they are buttery, crispy, soft and parmesan in a perfect bite. Ok, back to the chicken. Once I got the potatoes in the oven, I zested and juiced two lemons into a large measuring glass (the 4 c. version), added 6 sprigs of fresh thyme (I didnt even chop them, just took them off the stem), 1/2 t. salt, 1/2 t. pepper, 1/4 c. agave nectar and 1 c. of olive oil. Whisk until all combined and then pour 3/4 of the mixture into the bag with the chicken to marinate. I let the chicken marinate (in the fridge) for about 15-20 minutes. The oven should be preheated to 375 F. Place the chicken breasts in a glass baking dish and pour the remaining marinade over the chicken. Bake for 25-30 minutes. The chicken was MOIST and so flavorful. You have to try this..... And Im sorry - I had to post the pictures of the gloriously golden brown Amish potatoes.
